The house of Champagne Devaux was founded in 1846 by brothers Jules and Auguste Devaux, based in the Côte des Bar. This is 70% pinot noir, 30% chardonnay, primarily from Montgueux, with smaller amounts from Vitry, Côte des Blancs. Though the base wines were fermented in stainless, this used 25% reserve wines, stored in oak. After around 3 years sur lattes, this was dosed with 9 g/L. Bread dough and cherry brioche lead the cushy palate, with red apple and nougat, tightened with lemon pith and peel, which spirals through the finish. A smart, friendly option, best partnered with food.
